Hello Spirit Lovers and Merry Christmas!!

Well this year has flown past in a blur of activity and production! What a year we have had, it has been amazing! We are so humbled by all the support and positive feedback from our visitors, we couldn’t have hoped for more in our first year of trading so a massive thank you.

We have now sold all slots for the ‘Alchemist Academy Experience Private Cask Ownership’ until May next year! November saw Brett Malone come and make his very own Whisky with MPH over a 3 week period and he now has a new appreciation of small batch Whisky and what goes into it! He couldn’t believe on his final spirit run that the pure clear new make had come from the whisky wash he had made only 3 weeks before!! Thanks Brett for your support and enthusiasm during the experience, even while digging out the mash tun!! See you in 6 months for your first private tasting!!! We saw an impasse between MPH & I on the recipe for the Christmas Gin release so we turned the decision over to our visitors over a 4 week period we asked our visitors to taste and vote on the one they liked the best!! Recipe 1 was a clear winner and so went into production ready for the beginning of Dec Thank you to all those who voted! (Oh and recipe 1 was MPH’s favourite! ha ha)  It is a Limited release so be quick available in the tasting room for sale now!

November saw the inaugural Stanley & Tarkine Forage Festival and we were proud to be involved in doing tastings for the movie night, the weather was dreadful all weekend and it caused some events to be cancelled but the festival overall was a great success and brought lots of people to the NW Coast so that’s always good for all local businesses.

We also had an article in the Tas Weekend linked to the Stanley & Tarkine Forage Festival that was very tongue in cheek and made MPH and I laugh (me more than MPH to be honest)!! In case you missed it here is the extract!!

THE MAD SCIENTIST

Matt Packwood-Hollings, of Table Cape’s Alchymia Distillery, may appear rough on the outside, but inside exists the soul of a scientist.

A tour of his distillery reveals a master who has armed himself with the tools to explore his burgeoning powers by hand – no machination for this Michelangelo.

The Latrobe-grown barley is handsifted, to pick out nasties like snail shells and strands of cotton which make it into other drops. English ale yeast is added for flavour, distillers yeast for a “good, clean alcohol”.

The ferment goes for an extraordinary seven days – “it’s not yield or speed, it’s flavour,” he says. It goes into Joyce – that’s his main still. Jerry-rigged onto Joyce is Muriel, the “vodka tower”.

He has a botanical station and is a tour de force explaining the infinite permutations. For instance, Matt loves using macadamia oil for oily mouthfeel in his gins. But the extracted oil doesn’t blend with the spirit. So he wraps his big bear hands around a microplane, and sets to work finely hand-grating his nuts to infuse the oils properly.

All the while, bubbly wife Sarah holds court in the attractive tasting room, a converted shed which has stood for a century-and-a-half.

Early Dec saw a visit from the Tourism Tasmania event team to experience Alchymia Distillery’s Tour with the Distiller and a tasting. It was an early start at 930am however they did have a driver so all good to go !! Thank you to Tourism Tasmania for visiting us and watch this space for some events next year.

22nd – 23rd April – Trail Graze weekend is back on after a storming inaugural event earlier this year Amy Pegg will be playing on the 23rd

Due in Early 2023 – Alchymia Distillery Coffee Liqueur currently taking 36 hours to cold drip (we’ll need to work on that MPH)!!
